Summer entertaining is upon us, and you all know how much I love to throw a party! For me, a house is only truly a home when it holds many memories, and I’ve been busy making lots of memories the last few years! It’s a strange thing that happens after you get divorced when there is a certain mourning period for all the memories you no longer share in a marriage. Of course, those moments will always be there, but it’s different than being able to turn to your partner and say “remember when”. As you know, Kyle and I are grateful to have a wonderful co-parenting relationship and it’s nice to have that friendship because the door is never closed on sharing memories or honoring them. I do have a new life, though, a new partner, and a newfound perspective on life– and so it’s been a priority of mine the last few years to welcome experiences into my life that can create lasting memories for me and my family. And one of the ways I love to do that is by entertaining at home! My kids always love when we have friends and family filling our home, too. It’s a feeling that I remember well as a child, and it makes me happy to recreate that for them.
A party, of course, isn’t complete without delicious food, and I know sometimes I struggle to think of simple and yummy appetizers and finger snacks that guests can enjoy. I served a new one the other day, and they were a huge hit so I knew I had to put them on the blog: introducing my Mini Baked Potato Appetizer!
These little mini potatoes are so adorable, a crowd-pleaser and the perfect bite of yumminess to hold you over while you sip a cocktail. Kids love them too! As a tip, you can always make these ahead and then keep them warm in the oven until you’re ready to dress them. I like these slightly warm, but they don’t have to be hot by any means. Just not cold!

Step 1:
Coat Potatoes with Olive Oil and Salt
Place 12-15 mini potatoes in a large mixing bowl. Add Extra Virgin Olive Oil and salt on top of the potatoes and toss until all potatoes are fully coated.
Step 2:
Preheat and Bake
Preheat your oven to 375 degrees. Place your baking sheet of potatoes in the oven for 30 minutes or until the potatoes are cooked through. Jiggle them halfway through so they brown evenly.
Step 3:
Cut into Potatoes
After you have removed the potatoes from the oven, set them aside to cool for a few minutes. Once they have cooled enough to touch, cut into the potatoes making room for the toppings you will be adding on.
Step 4:
Add Toppings and Enjoy!
Add the toppings of your choice and serve immediately.

Equipment
- 1 Mixing Bowl
- 1 oven
- 1 Knife
- 1 Spoon
Ingredients

- 1/3 cup Olive Oil
- 1 pinch Salt
- 1 pinch Shredded Cheese
- 1/3 cup Sour Cream
- 1 pinch Chives
- 1/3 cup Hormel Chili
- 1 pinch Bacon Bits
Instructions
