Eva Amurri shares her Healthier Frozen Banana Pop Recipe

My main goal in life is to trick my children into eating things that are good for them. LOL. I have become quite the ninja at it if I do say so myself. All three kiddos have recently been begging for ice cream every single night after dinner. Their argument: “It’s getting sunny out, Mom!”

They’re not wrong, but giving kids ice cream every single night isn’t so right either, in my opinion! I wanted to figure out a treat we could compromise on– one that was cold and festive, and sweet, but also made with more whole food and not processed. I decided to make these super easy and adorable frozen banana pops, and they have been a HUGE hit in our house. The tahini chocolate coating has protein and fiber, and the banana is a serving of whole fruit! My kids love helping me decorate these. I even eat them if I’m craving something sweet, as they’re totally dairy-free. Such a great option for my fellow dairy-free peeps!

I hope these give you a fun, sweet treat to enjoy as the weather warms up! Let me know if you try these, and how you like them!

For the coating…

Step 1:

Prep bananas and coating

Peel bananas and cut them into thirds. Place a popsicle stick in the center of one end and place them in the freezer for a couple of hours. To make the coating add the coconut oil to a saucepan and melt over low heat. Whisk in the remaining ingredients until combined. Heat for roughly 2 minutes and then add to a bowl.

Step 2:

Coat banana and add toppings

Roll each banana into the bowl of coating. Next, roll it in the topping of your choice.

Step 3:

Set Aside to Cool and then Enjoy!

Place completed pops on wax paper until cooled. Once cooled serve and enjoy!

These are so cute! Popsicles with pureed whole fruit might be another good option.
