Happy Cinco De Mayo! What a great day to enjoy some delicious Mexican food, and perhaps mix up a spicy marg or two. And speaking of Margs, did I ever mention that tequila isn’t really my thing? After a bad experience or two with tequila in college, I just can’t enjoy it as much…and I rarely drink it. It got me thinking of all of the people I know right now who are not only not drinking Tequila…but who aren’t drinking AT ALL! There has most certainly been a sober curious movement circulating within my own inner circle of friends and family members….and I think within society at large. It’s been so fun recently to see more and more non-alcoholic businesses popping up, as well as non-alcoholic sections of cocktail menus. The truth is that alcohol doesn’t work for everyone, and that’s ok!
In the spirit of that, I thought it would be fun to create a Margarita Mocktail this Cinco De Mayo holiday! You can enjoy it without any hangover in the morning. Plus, this one has a little kick that will help you lace up those dancing shoes! I absolutely love jalapenos in cocktails…and one of my favorite pairings with Jalapeno is actually Pineapple! The Spicy Pineapple Margarita Mocktail is so simple to make, inexpensive, and not too sweet. Just how I like it! Of course, if you’d like to you can always add alcohol to this mocktail recipe if you have guests who would prefer it that way. The choice is up to you! Ingredients…
(makes up to 4 cocktails)
- 2 jalapenos
- 1 cup cubed pineapple
- pinch of mint leaves
- 2 cups Pineapple juice
- 1 cup Seltzer
Step 1:
Muddle Solid Ingredients
Place cubed pineapple, sliced jalapeño peppers, and mint leaves into a cocktail shaker. Muddle until juices are released and solid foods are broken down.
Step 2:
Fill and Garnish
Line the rim of your glass with your favorite salt (I did chili seasoning and a Himalayan salt mixture). Add ice, a couple of scoops of the muddled ingredients, 1/2 cup of pineapple juice, and 1/4 seltzer to your glass. Top with a few pieces of pineapple and/or jalapeño pepper slices and enjoy!

Equipment
- 1 Cocktail Shaker
- 1 Muddler
- 1 Cutting Board
- 1 Cutting Knife
Ingredients

- 1 cup Pineapple, Cubed
- 2 cups Pineapple Juice
- 1 cup Seltzer
Instructions
