Easy weeknight dinners my kids won’t complain about is top of mind for me every week. And if there are fewer pans and dishes to clean, that’s a plus too! My kids love quesadillas, and I decided to figure out a way that I could make more of them in less time…and not have a hot pan on the stove. Mateo is at an age now where he is super interested in whatever is going on in the kitchen, and it’s personal nightmare of mine thinking about him grabbing a sizzling hot frying pan when I’m making 6 quesadillas for dinner! The other thing I love about this recipe is that I can make half the sheet pan with plain cheese like my two boys like it, and then make it with the meat filling for the rest of us. You can also swap out non-dairy cheese in certain areas of the quesadilla! In short, this is a highly versatile family meal.

Ingredients…
- 8 flour tortillas large burrito size
- 1 lb ground beef
- 1 15-oz can of black beans drained and rinsed
- 1 2.25-oz can sliced black olives drained and rinse
- 3 cups Colby and Monterey Jack cheese fancy shredded
- ½ cup salsa
- 1 bell pepper seeded and diced
- 1 small yellow onion diced
- 1 ½ tablespoons olive oil
- 1 ½ teaspoons chili powder
- 1 ½ teaspoons cumin
- 1 ½ teaspoons smoked paprika
- 1 teaspoon chopped garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
Step 1:
Preheat oven and cook onions and peppers
Preheat your oven to 425 degrees. While the oven is preheating, cut your onion and green pepper and place them into a pan. Add olive oil and cook for 5 minutes.
Step 2:
Add beef and garlic
Once the onions and peppers have cooked for 5 minutes add your ground beef and chopped garlic. Cook until the beef is browned.
Step 3:
Drain and add remaining ingredients
Once browned, remove from heat and drain excess fat. Return back to heat and add the remaining ingredients to the pan. Stir well after adding each ingredient.
Step 4:
Prep pan and tortillas
Lightly spray your sheet pan and place 7 of the 8 tortilla shells onto the pan. Make sure those shells on the outside of the pan are hanging over the edge.
Step 5:
Add mixture to tortillas
Add the mixture that you cooked onto your tortillas. I only added the mixture to half of the sheet of quesadillas as my boys only like cheese ones.
Step 6:
Add final tortilla
Now that you have placed your desired mixture onto the tortillas, add your final tortilla in the center.
Step 7:
Fold and Bake
Next, you will take the tortilla shells that are on the outside and fold them in to seal them off. Place a second baking sheet onto the quesadillas now that they are folded to keep any edges from coming undone while baking. Bake for 20 minutes.
Step 8:
Cut and Serve
Now that your quesadillas are cooked, take a pizza cutter and cut them into pieces. Serve with salsa, guacamole, or even sour cream on the side!
