We often get into breakfast cooking ruts in our family. Our hectic morning go-to’s are always oatmeal, frozen waffles, and cereal. On the weekends, we normally opt for Ian’s Famous Pancakes or egg sandwiches….and that’s kinda it. Every so often, I dig deep and make one of my other breakfast faves (I love a breakfast casserole, for example), but I had been craving something to switch it up. My kids LOVE bacon and they LOVE pancakes…so I decided I wanted to dream up something fun that would be fun and easy to make. Plus, something a little more interesting for an adult palette. After a few tries, these Orange-Glazed Bacon Pancake Bites were born! These are so so delicious, and are a fantastic option if you’re hosting guests as well! They feel so fancy, even though they’re just literally pancakes in a different mold. We love a food makeover moment!
Just a reminder that these don’t reheat or freeze very well, so I recommend eating them right when you make them. My kids also love to dip theirs in freshly whipped cream with a few drops of vanilla added in! Let me know if you try these, I can’t wait to hear what you think.
Ingredients…
For the pancake bites…
- 3 cups all-purpose flour
- 1/4 cup sugar
- 1/2 tsp. salt
- 1 tbs. baking powder
- 2.5 cups of milk
- 1 tbs. white vinegar
- 2 tsp vanilla extract
- 2 eggs
- 1/2 stick butter, melted
For the glaze and topping…
- 1/2 cup cream cheese, softened
- 1 cup confectioners sugar
- 1/4 cup orange juice
- Pinch of salt
- Zest from 1 orange
- Chopped cooked bacon
Step 1:
Preheat Oven and Combine Dry Ingredients
Preheat oven to 425 degrees. While the oven is preheating, in a large bowl combine flour, sugar, 1/2 tsp salt, and baking powder. Mix and set aside
Step 2:
Combine Wet Ingredients
In a small bowl, combine the milk and vinegar. Stir and let sit for 1 minute. Whisk in the vanilla, eggs, and butter.
Step 3:
Combine wet and dry ingredients
Pour the wet ingredients into the dry ingredients and mix well.
Step 4:
Grease and fill muffin pan
Grease or spray two mini muffin baking pans. Fill cups 2/3 full. Bake for 9-12 minutes or until lightly golden brown on top.
Step 5:
Make the glaze
While the muffins are baking, in a small bowl, whisk the cream cheese, sugar, and orange juice until nice and smooth.
Step 6:
Top bites and Enjoy!
Once the muffins are cool enough to handle, dip the tops into the icing and then chopped bacon. Serve warm and enjoy!

Instructions
