A crockpot recipe is a beautiful thing, especially on my busiest days. The joys of dumping something in that crockpot and returning hours and hours later to a fully cooked meal go unparalleled in my book! I’ve been really busy lately, and whenever I’m busy I feel like breakfast gets shafted big time. I will fully prepare my kids breakfast, and then forget to eat myself. By the time I’m finished getting them ready and off to school, and going through my work inbox, it’s nearly lunchtime! I’ve realized that I need to start incorporating breakfast back into my life to be at my best, energy-wise. 

Today I thought I would share the easiest and yummiest Crockpot Breakfast Casserole that literally cooks while you sleep. All you do is layer some super simple ingredients and you have a piping hot and protein-rich breakfast when you wake. My favorite thing about this Breakfast Casserole is that it can be modified however you like. I tried this as pictured, and then did it another time without the bacon, and layering in grilled veggies and goat cheese. You can also swap out the bacon for sausage if you’d like! 

It’s worth mentioning that I’m sharing this recipe days before Mother’s Day because EVEN DADS CAN MAKE THIS! All they have to do is set it before he goes to sleep, and Mom can have some delicious casserole in bed the next day. For any Dads out there: I highly recommend bringing this casserole to Mom on a tray, on some beautiful china, with a side of fruit and a mimosa for good measure. I think she deserves it!

Step by Step...

Step 1

Cook Bacon

Place your diced bacon in a nonstick skillet and sauté until browned. Drain some of the extra fat from the pan and set aside.

Step 2

Layer Ingredients

After spraying the inside of your crockpot with cooking spray, spread out half the hash browns at the bottom of the crockpot, followed by half the chopped onions, then half the cheese, then half the cooked bacon. Repeat the layering again with the remaining ingredients.

Step 3

Add Eggs

Whisk your eggs in a large mixing bowl with your cream, garlic powder, and some salt and pepper to taste, and then pour the mixture over your layered ingredients. Cook on low for 8 hours.

    This sounds amazing, and I am so ready to try! Is there a reason why you opted for frozen spinach and not fresh?
