This is the easiest and yummiest Crockpot Breakfast Casserole, and it literally cooks while you sleep! All you do is layer some super simple ingredients and you have a piping hot and protein-rich breakfast when you wake. My favorite thing about this Crockpot Breakfast Casserole is that it can be modified however you like. I tried this (as pictured), and then did it another time without the bacon, and layering in grilled veggies and goat cheese. You can also swap out the bacon for sausage if you'd like!
Place your diced bacon in a nonstick skillet and sauté until browned. Drain some of the extra fat from the pan and set aside.
After spraying the inside of your crockpot with cooking spray, spread out half the hash browns at the bottom of the crockpot, followed by half the chopped onions, then half the cheese, then half the cooked bacon. Repeat the layering again with the remaining ingredients.
Whisk your eggs in a large mixing bowl with your cream, garlic powder and some salt and pepper to taste, and then pour the mixture over your layered ingredients. Cook on low for 8 hours.
