Summer is coming to a close, and we’ve had a whirlwind one. We’ve all been going in a million directions, and if you follow me on social, you probably know by now that I’ve been doing it all without consistent childcare. In many ways, this summer has been the most stressful one since I became a Mom and business owner. On the other hand, it has also been one where I’ve had the ability to spend the most time with my kiddos and to do all kinds of fun activities with them. As crazy as it’s felt in the moment, I know I’ll look back and be grateful for this time. The years really are so short.

I would say that Summer 2022 has definitely been characterized as the summer of OUTSIDE. We spent a ton of time outdoors, and one of our favorite things to do at home on our patio has been to make little fires in our outdoor fireplace and gather as a family. We especially love roasting S’mores! In honor of our little tradition, I wanted to put out one more festive summer dessert that the whole family will love. Introducing: my Camp Fire Cupcakes!

I absolutely love how these treats turned out, and you can customize them to your cake liking, too! My kids flipped for the tiny roasting marshmallows on top of the “fire” icing. They were almost too cute to eat…but we managed to persevere and dig in! LOL. I hope you find time before the summer is over to bake these with your littles. And don’t forget: early Fall can be the best time ever for campfires and outdoor fireplaces! We love snuggling up with blankets in front of us when the weather cools down a bit. Camp Fire Cupcakes

Step 1:

Preheat Oven and Bake

Preheat your oven to 350 degrees and line the cupcake tin with liners. Follow the directions verbatim on the back of the cake mix box and bake for the allotted time.

Step 2:

Set Aside to Cool

After the cupcakes are done baking set them aside to cool. Once cooled, remove them from the cupcake tin and place them in a ziplock bag if you are not decorating them right away.

Step 3:

Frost and Coat

Frost the top of the cupcake with a thin layer of white frosting. Next, crush up graham crackers in a bowl and add cocoa powder. Dunk your lightly frosted cupcake into the bowl and coat entirely.

Step 4:

Make Fire Frosting

In two separate bowls add white frosting. Add yellow food coloring into one and red food coloring into the other and mix thoroughly. Place frosting from both bowls into a plastic frosting sleeve, making sure to strategically place one color on one side and one on the other so that when it comes through the opening that both colors are present. Put a generous amount swirling the frosting up into a “flame”.

Step 5:

Finishing touches

Using a candle lighter, light the edges of the mini marshmallows to create a burnt look. Add the small pretzel sticks on the outside of the frosting flame and gently place the burnt mini marshmallows over the frosting flame on toothpicks. Enjoy outdoors on a cool summer night!

  • 1 oven
  • 3 Mixing Bowls
  • 1-2 cupcake pans
  • 3 mixing spoons
  • 1 frosting bag
  • cupcake liners
  • 1 box Toothpicks

Ingredients

  • 1 box french vanilla cake mix

  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 bag mini marshmallows
  • 1 bag pretzel sticks
  • 1 container frosting
  • 1 box graham crackers
  • 1/4 cup cocoa powder
  • 4 drops yellow food coloring
  • 4 drops red food coloring
