When you get thrust into parent-mode and go from having zero kids to three kids literally overnight, you deserve a trip to the sanitarium. Just kidding, I meant to say YOU LEARN HOW TO MAKE A GREAT BREAKFAST!!! LOL. The kids have been demanding pancakes from Ian since he started spending more time at the house, and when I tell you that nine months into living together he has very well perfected his recipe. It took a few iterations, but the pancakes he makes us now are top-notch! Some of you even started reaching out to me on social media or by email, telling me how delicious they looked in my IG stories and asking for the recipe. Sometimes it doesn’t even occur to me to put the simpler recipes we use on the blog, so I’m always so grateful for the reminder and push to do it!

We make pancakes as a family every weekend…and if Ian has enough time, the kids can sometimes get him to make them midweek as well. It’s so cute to see them helping him in the kitchen, and even Mateo has gotten the hang of it! Ian helps him flip the pancakes. I don’t know if they’re old enough yet for it all to be part of their core childhood memories, but I hope they are. I know it’s seared into my memory as a Mama.

Today, I’m sharing Ian’s Pancake recipe. It’s such a beautiful one for us, and the first one I put in my official “recipe box” to pass down to the kids because it’s one that was created at the same time as my new chapter in life. These pancakes will always be special to me because of that. I can’t wait to hear if you make them, and what you think! Just wanted to note that when I’m eating them, Ian substitutes whole Goat Milk for the cow dairy and the pancakes are still delicious. You could use nut milk in place of that, but honestly, I wouldn’t recommend it! It never tastes the same. Serve with berries and whipped cream if you want to be like three Martino kids I know!

Ian's Pancake Recipe

Step 1:

Combine the dry ingredients

In a large mixing bowl, combine the flour and baking powder.

Step 2:

Combine the wet ingredients

In a separate large mixing bowl, combine the milk, egg, and oil or butter.

Step 3:

Combine wet and dry ingredients

Pour either the wet ingredients or dry ingredients into the other and stir until the ingredients are combined entirely.

Step 4:

Heat and Grease Frying Pan

Heat up your frying pan before adding your pancake batter. Once the frying pan is heated up, add your pancake batter.

Step 5:

Cook and Flip

Cook your pancakes on their first side until you see bubbles appear. Once you see the bubbles come through, it is time to flip the pancakes. Cook on the other side for another minute depending on the thickness.

Step 6:

Serve and Eat

Serve your pancakes with butter, syrup, whipped cream, and some fresh berries!

    Question – you have a dairy allergy, right? Does he use cows milk in these or an alternative? I have one kid who can’t do dairy and one who can so just curious. They look so yummy!!

    • Hi! I touched on this above, but he uses whole cow milk for the kids, and whole goat milk if I’m eating them too! I do NOT personally recommend using nutmilks as I don’t really feel it tastes the same in these

    • It kind of depends! Sometimes he uses butter, and sometimes he uses canola oil (when I’m eating the pancakes!)
