Hear me out: grilled fruit is one of the top gifts of Summer Living. There are few things as delicious as a perfectly ripe piece of fruit (double points if you grew it yourself!) that has been grilled and slightly caramelized by the char…so that the juices of the fruit and the sweet and smokiness of the grill’s kiss blend together and create the most mouth-watering bite… SUMMER GLOW-UP COMPLETE! I’m clearly a couple of hours late to lunch. LOL. But jokes aside, if you haven’t been testing out grilling all sorts of fruits this summer and adding them to your daily meals, you are missing out!

One of my favorites for grilling is the peach, and such a simple and adorable dessert during these summer months is my Grilled Peach Ice Cream Bowls! The beauty of these is that you really only “cook” one element, and then assemble the rest. The ingredients can also be as “clean” and healthy as you’d like them to be…and these are almost always a great option for people with dairy or gluten allergies. I fill mine with coconut milk ice cream, and I use gluten-free granola, too! But you can use the products of your choice.

The sweet and smoky grilled peach, topped with creamy and cold ice cream, and sprinkled with granola and honey is just a gift in itself. Definitely try these at your next family dinner! Let me know what you think!

Step 1:

Prep the Grill and Peaches

Turn on your grill and allow it to heat up. In the meantime, take your un-riped peaches and cut them in half, cutting from the stem and vertically along the peach from one side of the stem to the other in one motion. After you have cut all the way through, using both hands turn both halves in the opposite directions to take them apart. Once the halves are apart, de-pit using a knife or a spoon.

Step 2:

Coat Peaches and Grill

Coat the flesh side of the peaches with olive oil using a brush and place the peaches over direct heat. Grill over direct heat for 4-5 minutes or until the peaches have grill marks and have softened a bit.

Step 3:

Add Toppings

Remove the peaches from the grill and place one scoop of ice cream, granola, and a drizzle of honey on top. Finish with a small amount of mint. Serve immediately so the ice cream doesn’t melt.
