Peaches are in season right now and are SO GOOD and ripe and perfect! I love going around to the local Connecticut farms this time of year and buying up a ton of perfect produce. Peaches are a family favorite, and I really love figuring out new, fun ways to use them. I’ve said it time and time again on this blog, but I’m more of a cook than a baker. I don’t have the patience for baking, and so when I make a dessert I like ones that are pretty simple and quick. The other day, we got a huge bushel of beautiful, ripe peaches from Sport Hill Farm, and I knew I wanted to make a simple and delicious dessert…so I made these cute little Hand Pies! The idea behind “Hand Pies” is that they’re portable and easy to hold in one hand…you don’t need a knife or fork, and you can wrap up a bunch and eat them later. They’re perfect for a picnic! Other cultures call these empanadas, and yes they’re basically the same. The difference is…I use store-bought biscuit dough and an air fryer to make these even easier with no mess, and super simple cleanup. 

I use the biscuits that come in the can from the refrigerator section. You simply roll out the rounds until they’re about ½-inch thick, put some filling in each, and then seal them up. Pop them in the air fryer for about 15 minutes, flipping halfway through. Make sure to preheat your air fryer! Depending on your biscuits, you may need to have them in a little longer or a little shorter, so make sure to keep an eye on the first batch. Also, make sure not to crowd them in there, they should be in a single layer. You can always fry in batches. The recipe is below, let me know if you try these!

Step 1

Combine

In a small saucepan, combine the peaches, water, sugar, and lemon juice. Turn the heat up to high, bring liquids to a boil, and then turn down to a simmer. Add the cornstarch and stir the mixture until thickened. Remove from heat, transfer peach filling into a bowl, and place in the fridge to cool. 

Step 2

Roll & Shape

Meanwhile, generously flour a clean surface so the biscuits won’t stick. Separate out all the biscuit rounds, and roll out each until they are about 1/4-1/2 inch thick. When the peach mixture has cooled (15-20 mins), spoon some into each biscuit round. Stick a finger in water and trace the edge of the round. fold the hand pie in half, and score the edge with a fork to seal. Fry your hand pies in batches until golden, about 7-8 minutes on each side.

Dust & Enjoy

Dust with the powdered sugar, and enjoy!
