The weather is finally prime for some grill action! And whether you have an outdoor grill or not, I love a recipe that can be achieved on a simple grill pan. It’s the one-pan cleanup for me! I’m such a burger girl, but I’ll admit that when spring hits I generally am looking to cook lighter and leaner options. These Chicken Avocado Burgers have been such a hit in our house recently that I thought I’d share! 

I’m really particular about chicken. I definitely can only eat chicken a few different ways or I feel queasy. It’s a really weird remnant from my pregnancy aversions that just stuck around. This chicken burger totally works for me, and I love that it’s healthier than the typical beef burgers I’d cook up. The avocado gets cooked into the burgers, and is a yummy nod to my family’s time in California. I still miss my perfectly ripe Cali avocados! 

A little note about condiments—you can do as you please (I add lettuce and tomato to this burger for some extra veggies on top) but my favorite thing to slather on it is equal parts ketchup. and mayo, with a sprinkle of paprika mixed in. So yum! I hope you enjoy these as much as we do!

Step 1

Combine Ingredients

Add all the ingredients to a large mixing bowl. Using clean hands, gently combine everything together and divide the mixture into 4 patties.

Step 2

Grill

Heat your grill pan on a high flame and spray with some cooking oil. Then carefully place your patties down and cook for 5-6 minutes on each side. Note: These can be quite messy, so make sure to cook well on the first side to avoid them falling apart when you flip them over.

Step 3

Temp Check

After your patties have cookies on both sides, and you’ve checked that they’re all at least 165ºF, remove from the grill pan and set aside on a plate until you’re ready to enjoy.

    I love this recipe. It’s so simple but delicious. It’s so easy to customize a bit – I like to add chopped red onion and/or jalapeño for a bit of a kick – but still excellent on its own.
