It’s around this time of year that I get back into eating big salads at meal times! Not for every meal, of course, but I start to crave fresh veggies in the spring, and it’s a great time to be celebrating all the beautiful produce that’s on the shelves. Over the years, I’ve developed quite a library of salad dressings that I love…and I’m a BIG dressing gal. I’m definitely not one who enjoys eating my salad with just a squeeze of lemon and a drizzle of olive oil! I like mixing up these dressings to have in my fridge, because they’re easy, healthy, and really make me reach for my greens more than if I don’t have them on hand. The Cilantro Lime dressing is also a great one for over fish and grilled veggies! I sometimes use my Mama’s Vinaigrette as a super simple marinade for chicken before you put it on the grill. Try these all out, and let me know which are your faves!
Mama’s Vinaigrette
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- 1 tablespoon honey
Ginger Salad Dressing
- 1/2 cup chopped onion
- 1/3 cup rice vinegar
- 1/2 cup neutral oil
- 2 tablespoons ginger, minced
- 2 tablespoons soy sauce
- 2 tablespoons ketchup
- 2 teaspoon lemon juice
- 1/4 teaspoon black pepper
- 1 tablespoon maple syrup
Greek Salad Dressing
- 1 large garlic clove minced
- 1/2 cup extra-virgin olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon fresh-squeezed lemon juice
- 1/2 teaspoon Dijon mustard
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- Freshly ground black pepper, to taste
Cilantro Lime Dressing
- 1/2 cup greek yogurt
- 1/3 cup olive oil
- 2 tablespoons lime juice
- 1 cup fresh cilantro
- 1 clove garlic
- 1 teaspoon honey
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
Directions…
For each dressing, place all ingredients into the mason jar and shake until all ingredients are mixed thoroughly, or pour all ingredients into a blender and pulse until all ingredients are combined well.
Mama's Vinaigrette
Equipment
- 1 Blender
- 1 Mason Jar
Ingredients
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp dijon mustard
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lemon juice
- 1 tbsp honey
Instructions
- Place all ingredients into a mason jar and shake until all ingredients are mixed thoroughly, or pour all ingredients into a blender and pulse until all ingredients are combined well.
