I like to highlight and celebrate seasonal foods, especially fruit, when my fam and I can’t get enough! We’ve been alllll about watermelon recently. The kids love it, I love it, and it’s pretty spectacular to look at in my opinion. Who doesn’t love a pink and green moment?! We decided to have a little fun and throw our own Watermelon Fest at casa Martino, to appreciate all things Watermelon season.
I came up with this Watermelon Mojito recipe, which is super easy to make “virgin” as well (ie, don’t worry, Marlowe’s did not contain alcohol!). I also thought it would be fun to make some “Watermelon Fries” with a lime-yogurt dipping sauce as a healthy snack alternative. Serve this with my Sweet & Salty Salad from my Mother’s Day brunch, and you have a delicious Watermelon-themed lunch! If you can’t be a little extra in the summer time, when can you?
Watermelon Fries With Lime Yogurt Dip Recipe
- 1 Watermelon
- 1 cup greek yogurt
- Juice of 2 limes
- Zest of 1 lime
- 1 Tablespoon Honey
Cut your watermelon in to long skinny fries. Don’t make too thin, so they hold up when dipping! Next, mix your dip. Combine the yogurt, lime juice, lime zest, and honey. Enjoy immediately!
Watermelon Mojito Recipe
- 1 1/2 oz White rum
- 3 oz Watermelon juice
- Watermelon Cocktail Sugar Rimmer
- A squeeze of lime
- Fresh mint (the more the merrier!)
- Club soda
First, take a wedge of lime and rub it along the rim of your highball glass. Place the watermelon cocktail sugar rimmer onto a flat plate and place your glass upside onto the sugar until it’s coated evenly. Then muddle the mint by combining it with the rum and the watermelon juice inside a cocktail shaker with ice, and shake for 15 seconds. If you don’t have a cocktail shaker, use a cocktail muddler in a dish before pouring mixture into a highball glass over ice. If using the cocktail shaker, strain the mixture over ice into a highball glass over ice. Top off with club soda, a squeeze of lemon and garnish with lots of extra fresh mint! Enjoy!
