Seasonal Bites: Fig Toast

I really love eating seasonally.  There’s something about finding fruits and vegetables in season and at their best that really encourages me to eat more fruits and vegetables  (Loving that for me).  A great way to find out what’s in season is to visit your local Farmer’s Market.  I go to the Farmer’s Market bright and early on Sunday mornings with Marlowe.  It gives us something to do, I get my grocery shopping done, and the baby can steal a bunch of samples for breakfast. Everyone wins! When I’m there I look to get inspired for my weekly meal planning.  I always go for what looks delicious and plan my meals around that.  Epicurious is a great website for this! (Just type in your ingredient and find tons of recipes and meal ideas)
This week the figs were looking extra luscious.  I picked up a of couple crates and made up this toast recipe for breakfast! So delicious and healthy.

  • One slice multigrain bread
  • Four ripe Figs, peeled and thinly sliced
  • 2 Tablespoons Goat Cheese (You substitute Ricotta cheese or Cream cheese!)
  • 1/2 Tablespoon of honey

Recipe:  Toast the bread.  Spread the goat cheese, ricotta, or Cream Cheese on the toast and top with the slices of figs.  Drizzle with the honey.  Enjoy!

    I love this idea! My grandfather had a fig tree in his back yard (in Istanbul) and we’d gorge on delicious fresh figs at the end of every summer visit! You can try your recipe with feta cheese too for that savoury vs. sweet effect! :))
