I absolutely LOVE a Mojito in the summer. I find that you’re either on the Mint train in life….or really not on it. LOL. I am firmly riding the Mint Train, and I can’t think of anything better than a drink that celebrates it! Mojitos always remind me of Girls Nights in my 20s, but this particular Creamy Blackberry Mojito was a recent concoction. I especially love this one because it can easily be made Virgin! Just sub out the rum for Sprite, Club Soda, or a 0% Rum alternative, and you’re set. There are enough other ingredients that you won’t even miss it!

Ingredients…
- 8 mint leaves
- 5 blackberries
- 1.5 oz. White Rum
- 1 lime
- 2 oz. Cream of Coconut
- Ice
- Soda Water
- Mint Sprigs
- Lime Wheel

Creamy Blackberry Mojito
Equipment
- 1 Cocktail Shaker
- 1 Muddler
- 1 Plate
Ingredients
- 8 Mint Leaves
- 5 Blackberries
- 1.5 oz White Rum
- 1 Lime
- 2 oz Cream of Coconut
- Soda Water, A splash
- Mint, For Garnish
- Lime, For Garnish
Instructions
- To make the sugar lime rim, combine the lime zest, sugar, and salt on a shallow plate. Run a lime wedge around the rim of your glasses then dip into the sugar mixture. Fill with ice.
- Lightly muddle the mint and blackberries in a cocktail shaker. Add the rum, lime juice, cream of coconut, ice, and shake.
- Strain into rimmed glass. Top with club soda. Garnish with a mint sprig, blackberry, and lime wheel.
