When you think of Jimmy Buffett, you probably think of music , then immediately…Margaritas.  While there’s nothing wrong with Margaritas (in fact, this was weirdly one of the unrequited cravings I had while pregnant) this cocktail is not what you’d expect from the name.

Marlowe’s Godfather, Tyler, is the person who introduced Kyle and I to these cocktails with the promise that you could drink them “all day with no hangover”. Apparently this is a drink that Jimmy himself drank in Trinidad during Carnival.   I can personally attest to the fact that you can drink them all day, but the lack-of-hangover promise I could not swear under oath.  What I do know is that they are the perfect “tropical” adult beverage without being overly sugary.  I recommend clutching one under an umbrella in a brightly colored bikini, with your child at your Mother’s house.  Thumbs up!  Below is the recipe for the delicious, and hydrating, Jimmy Buffett’s!

Ingredients:

  • 1.5 ounces Dark Rum
  • 4-5 Ounces Coconut Water (I prefer Harmless Harvest!)
  • Juice of 2 limes
  • Ice

Recipe:
Place first three ingredients in to a cocktail shaker with ice and shake vigorously.  Pour in to a Collins Glass (or highball!) over ice.  Garnish with a wedge of lime.  Enjoy!

Tropical fruits ‘n rum are deelish! I would like to wonder if the ‘light’ rum would be less heavy?? Just a question is all. thanks honey…” Demi” on FB…

Buffett’s own recipe just calls for “good Caribbean rum”… While he doesn’t specify dark or light, I’m sure he didn’t mean that bastardized spiced black “The Kraken” rum. Yuck…. I love them with white rum, myself.
