I’ve been on a baking tear recently with so much time spent at home, and I’m starting to get excited with all of the fall fruit showing up in abundance at the farmer’s market!
I was poking around the HEA archives and found this crumble that I used to make all the time in Los Angeles when Marlowe was a baby! I had totally forgotten about it, and it’s still one of my favorite SUPER easy desserts. I especially love that you can make it with dairy substitutes so easily!
I love to enjoy this with a simple coconut milk ice cream, but feel free to also try out a regular chocolate ice cream…that’s how my kids enjoy it these days!
I wanted to bake up a sweet treat that still tastes like fall, but is a little more unexpected, and this Pear & Ginger Crumble does just the trick! The ginger brings a sexy bite to the sweet and seasonal pears, and that oaty-sweet crumble on top is the coziest and most delicious crust.
I adapted this recipe from this one by Ellie Krieger, but since I made quite a few changes, I figured I would include my adaptation below for an easier follow-along:

- ½ cup whole wheat flour
- 1⅓ cup old fashioned oats
- 1 cup light brown sugar
- 2 tsp cinnamon
- ¼ tsp salt
- ½ cup unsweetened butter, melted
- 2½ lbs bartlett pears, firm but ripe, peeled, cored, and cut into ¼ inch slices
- ½ lb green apple (like Granny Smith), peeled, cored, and cut into ¼ inch slices
- 1 tbsp lemon juice
- 1 tbsp fresh ginger, grated
- 2 tbsp sugar
- 1½ tbsp all-purpose flour
- 1 pint coconut ice cream (for serving)

Step 1
Make the Topping
Preheat oven to 375 degrees F and combine the whole wheat flour, old-fashioned oats, light brown sugar, cinnamon, salt, and melted butter in a medium bowl, and work together with a fork until the ingredients are moistened and well combined.
Step 2
Make the Filling
Combine the pear and apple slices, lemon juice, and ginger in a large bowl. Add the sugar and flour, and toss well to blend.
Step 3
Assemble
Butter an 8-inch baking dish, transfer the pear mixture to the dish, and layer the topping over the filling.
Step 4
Bake
Bake until the filling is tender and the crumble top is golden brown (Approximately 40-50 minutes). Let cool for 10 minutes before serving. Enjoy!
