This recipe came as an option for one of our favorite Chinese foods, Sweet & Sour Shrimp! I wanted the same flavor profiles, but to be able to make it outdoors on the grill instead of in the wok—and with less oil. They're so yummy, and the combo of sweet grilled pineapple and the shrimp is like a little flavor explosion! You can serve this over rice, or even over greens for an ultra healthy salad.
Preheat the grill to 375º F and if you’re using wooden skewers, make sure to soak them in water for 30 minutes before grilling to keep them from burning. Combine the olive oil, coconut aminos, unsalted butter, garlic, ginger, and lemon juice in a large bowl, and add the raw shrimp. Cover the bowl with some Saran Wrap and let the shrimp marinate in the fridge for up to 20 minutes. *Don't marinate longer than 20 minutes! Any more than this and the shrimp will start to break down in the juices, and it will throw off the texture once you grill it.
After the shrimp is done marinating, remove them from the fridge and the marinade and season with salt and pepper. Next, add the shrimp, pineapple, and bell peppers to the skewers (in any order), repeating as many times as necessary until your skewer is full. Don’t forget to leave an inch on either side of the skewers so you can hold it with your fingers!
Once your grill is heated, add the skewers in an even line across, and grill for about 3 minutes on each side.
Add the skewers to a platter, serve and enjoy!
