These Grilled Peach Ice Cream Bowls make for the perfect summer dessert. The best part is you can add whatever toppings on top that you'd like. A great dessert option for those who suffer from allergies as well!
Turn on your grill and allow it to heat up. In the meantime, take your un-riped peaches and cut them in half, cutting from the stem and vertically along the peach from one side of the stem to the other in one motion. After you have cut all the way through, using both hands turn both halves in the opposite directions to take them apart. Once the halves are apart, de-pit using a knife or a spoon.
Coat the flesh side of the peaches with olive oil using a brush and place the peaches over direct heat. Grill over direct heat for 4-5 minutes or until the peaches have grill marks and have softened a bit.
Remove the peaches from the grill and place one scoop of ice cream, granola, and a drizzle of honey on top. Finish with a small amount of mint. Serve immediately so the ice cream doesn't melt.
