This Mini Baked Potato Appetizer is your go-to this summer for events you are attending or one you are hosting. These bite-size potatoes are so yummy and can be topped with anything you choose!
Place 12-15 mini potatoes in a large mixing bowl. Add Extra Virgin Olive Oil and salt on top of the potatoes and toss until all potatoes are fully coated.
Preheat your oven to 375 degrees. Place your baking sheet of potatoes in the oven for 30 minutes or until the potatoes are cooked through. Jiggle them halfway through so they brown evenly.
After you have removed the potatoes from the oven, set them aside to cool for a few minutes. Once they have cooled enough to touch, cut into the potatoes making room for the toppings you will be adding on.
Add the toppings of your choice and serve immediately.
