This recipe is so easy, and really impresses, since it looks ultra pretty! I love the combo of the grilled meat and the sweet and spiced cherry sauce. This sauce also goes well with chicken, if you prefer that to pork! This recipe below serves our family– the kids like it too! You can always buy a smaller or larger pork loin if needed. The sauce easily doubles.
Begin by Marinating your pork loin in the olive oil, salt, and pepper. Allow to sit at room temp for 15 minutes. Meanwhile, heat your grill or grill pan.
Combine the cherries, wine, sugar, and spices in a sauce pan. Bring to a boil, and then lower to a simmer, stirring every 20-30 seconds.
When your grill is hot, put your pork loin on. Turn every 4-5 minutes, until every side is browned, and the inside registers 155-160ºF on a thermometer inserted in the center. While the pork cooks, make sure to check on your cherry sauce often. It is done when the wine cooks down and the sauce thickens. Season to taste with salt and pepper if you'd like.
Once the pork is cooked, allow to rest for 5-10 minutes before slicing in to medallions.
Top with the cherry sauce and enjoy immediately!
