Heat the olive oil in a large pan over medium heat. Add the onion and garlic, and sauté gently until the onion starts to become translucent, about 5 minutes.
Add the Brussel Sprouts, a generous pinch of salt, and a grinding of black pepper. Sauté for approximately 5 minutes more.
Next, add the vinegar, turn heat up to high, and continue to heat until the vinegar boils off and it’s mostly evaporated (3-4 minutes more).
Turn the heat back to medium, add the mustard, and stir until well blended.
Remove from heat, serve with a generous squeeze of lemon, and enjoy!
