I love love love fresh cherries when they’re in season! Whenever summer comes around, I end up buying cherries almost every time I’m at the grocery store. It’s a great activity for the older kids too. Just give them a bowl of cherries outside, and they take their time chewing them and spitting the pits out. It gives me at least fifteen minutes of silence. LOL.
I also love that cherries are full of antioxidants, so I feel like I’m getting a little nutrient boost alongside my snack. Over the years, I’ve tried a lot of recipes with cherries, to use them up since I always seem to have them in the house! Today I thought I’d share my recipe for grilled pork tenderloin with Spiced Cherry Sauce.
This recipe is so easy, and really impresses, since it looks ultra pretty! I love the combo of the grilled meat and the sweet and spiced cherry sauce. This sauce also goes well with chicken, if you prefer that to pork! This recipe below serves our family– the kids like it too! You can always buy a smaller or larger pork loin if needed. The sauce easily doubles.
Note…
To pit a cherry easily, simply put a ripe cherry over the opening of a bottle. Use a metal straw or a chopstick to push the pit through the cherry and into the bottle.
Ingredients…
- 1 Pork Tenderloin
- 1 tbsp Extra Virgin Olive Oil
- ½ tbsp Salt
- 1 tsp Black Pepper
- 1½ cups Cherries, pitted
- ¼ cup Sugar
- 2 cups Red Wine
- 1 pinch Nutmeg
- 1 pinch Allspice
Step 1
Marinate
Begin by Marinating your pork loin in the olive oil, salt, and pepper. Allow to rest at room temp for 15 minutes. Meanwhile, heat your grill or grill pan.
Step 2
Start Cherry Sauce
Combine the cherries, wine, sugar, and spices in a sauce pan. Bring to a boil, and then lower to a simmer, stirring every 20-30 seconds.
Step 3
Grill
When your grill is hot, put your pork loin on. Turn every 4-5 minutes, until every side is browned, and the inside registers 155-160ºF on a thermometer inserted in the center. While the pork cooks, make sure to check on your cherry sauce often. It is done when the wine cooks down and the sauce thickens. Season to taste with salt and pepper if you’d like.
Step 4
Slice
Once the pork is cooked, allow to rest for 5-10 minutes before slicing into medallions.
Step 5
Enjoy
Top with the cherry sauce and enjoy immediately!
