Place cubed pineapple, sliced jalapeño peppers, and mint leaves into a cocktail shaker. Muddle until juices are released and solid foods are broken down.
Line the rim of your glass with your favorite salt (I did chili seasoning and a Himalayan salt mixture). Add ice, a couple of scoops of the muddled ingredients, 1/2 cup of pineapple juice and 1/4 seltzer to your glass. Top with a few pieces of pineapple and/or jalapeño pepper slices and enjoy!
