A one-sheet pan recipe that makes cooking during the week so much easier. This is a fan favorite in our household and you can customize it based on who is eating it.
Preheat your oven to 425 degrees. While the oven is preheating, cut your onion and green pepper and place them into a pan. Add olive oil and cook for 5 minutes.
Once the onions and peppers have cooked for 5 minutes add your ground beef and chopped garlic. Cook until the beef is browned.
Once browned, remove from heat and drain excess fat. Return back to heat and add the remaining ingredients to the pan. Stir well after adding each ingredient.
Lightly spray your sheet pan and place 7 of the 8 tortilla shells onto the pan. Make sure those shells on the outside of the pan are hanging over the edge.
Add the mixture that you cooked onto your tortillas. I only added the mixture to half of the sheet of quesadillas as my boys only like cheese ones.
Now that you have placed your desired mixture onto the tortillas, add your final tortilla in the center.
Next, you will take the tortilla shells that are on the outside and fold them in to seal them off. Place a second baking sheet onto the quesadillas now that they are folded to keep any edges from coming undone while baking. Bake for 20 minutes.
Now that your quesadillas are cooked, take a pizza cutter and cut them into pieces. Serve with salsa, guacamole, or even sour cream on the side!
