Begin by putting your pot of pasta water to boil. Don't forget to salt it! When the pasta water is boiling, add the pasta and cook according to the package directions.
Meanwhile, in a saucepan over medium heat, add the Extra Virgin Olive Oil, the garlic, and the red pepper flakes. Sauté gently until the garlic begins to brown slightly around the edges. About five minutes.
Open the cans of tuna, drain out the water, and add the tuna to the pan. Continue to cook, breaking up the tuna and stirring often, for about 5 more minutes.
Add the lemon juice and zest, and turn the flame down to medium/low, mixing to combine. Add salt and pepper to taste.
When the pasta is almost done cooking, reserve 1/4 cup of the pasta water, and set it aside. Drain the pasta when it's done, and add the reserved pasta water to the pan with the tuna. Stir to combine.
After the pasta is drained, add it to the saucepan, and use tongs to mix the pasta in with the tuna mixture. Add some arugula to the bottom of your serving bowl or plate. Top with the tuna pasta, and then add another sprinkle of arugula on top. Enjoy!
