First, grill your ears of corn so they are lightly charred, and remove the skin from the cucumber. Next, cut up your tomatoes, jalapeno peppers, cucumber, garlic, and onion. Remove the corn from the ear by cutting alongside its inner core to remove just the corn pieces. Take all your vegetables and place them into a mixing bowl.
Zest two limes and squeeze the juice on top of the vegetables in the bowl. Next, add a pinch of salt and 2 tablespoons of olive oil to the bowl and mix thoroughly. Top with fresh basil before serving!
