Preheat the oven to 350ºF. Get out a nonstick sheet pan, preferably with sides to avoid splatter from the bacon grease.
Slice each date, making sure to just cut an opening and not to slice it all the way through into two pieces. Fill each Date with goat cheese.
Next, slice your bacon strips across horizontally to make Double the amount of pieces. Wrap one piece of bacon around each Date approximately 1.5 times, securing with a toothpick, and place on a sheet plan.
Repeat Steps 2 & 3 until all your dates are stuffed and wrapped.
Place your sheet pan in the middle of the oven and bake for 10-15 mins.
After 10-15 minutes, remove the sheet pan from the oven and slightly turn each date so that they are evenly browned.
Return the pan to the oven and bake for an additional ten minutes or until golden brown.
Remove from oven and serve warm!
