This Baked Salmon with Lemon Garlic Dijon is so delicious, a breeze to whip up, and is totally healthy for the whole family. Plus, my kids love it! Because the fish is so soft, I can even give some to Mateo on his tray so that all of us are included in the meal.
Preheat your oven to 450ºF, and place your portioned salmon onto a nonstick baking sheet, and set aside. I’m obsessed with this one from Great Jones, and it’s so affordable!
In a small bowl, combine your EVOO, lemon juice, pressed garlic, dijon, and chopped parsley, salt, and pepper, and mix well.
With a spoon, pour the mixture over the salmon filets, making sure that the tops and sides are generously covered, and then top each filet with a lemon slice.
Bake for a little under 15 minutes, remove from the oven, and serve immediately. I like to pair it with a side of sautéed spinach and garlic for a seriously delicious, healthy meal!
