For Spring, I’m loving this Rosemary Grapefruit Refresher. It’s so yummy and light, and it works for brunch or dinner time sipping. I just love how the herbal notes of the rosemary mix so well with the citrusy burst of grapefruit and soda.
First, you have to make your rosemary simple syrup. Combine the water, sugar, and rosemary in a small saucepan over medium heat.
Bring to a boil while stirring, until the sugar has dissolved.
Simmer for 1 minute, remove from heat, and let the syrup sit for at least 30 minutes.
After 30 minutes, pour your syrup into a jar through a fine mesh colander to remove rosemary leaves, and store in the fridge for safekeeping until use.
Next, combine your gin or vodka, your grapefruit juice, and your rosemary simple syrup in a cocktail shaker with ice.
Shake vigorously to combine.
Pour into a Collins glass filled with ice. Top with a splash of club soda and garnish with rosemary sprig. Enjoy responsibly!
