First, take a wedge of lime and rub it along the rim of your highball glass.
Place the watermelon cocktail sugar rimmer onto a flat plate and place your glass upside onto the sugar until it's coated evenly.
Then muddle the mint by combining it with the rum and the watermelon juice inside a cocktail shaker with ice, and shake for 15 seconds. If you don't have a cocktail shaker, use a cocktail muddler in a dish before pouring mixture into a highball glass over ice.
If using the cocktail shaker, strain the mixture over ice into a highball glass over ice.
Top off with club soda, a squeeze of lemon and garnish with lots of extra fresh mint!
