VIDEO: Broccoli and Sausage Sheet Pan Meals with The Impatient Foodie

Elettra Wiedemann is the Executive Food Editor at Refinery29, and the Founder of Impatient Foodie– a Blog dedicated to finding the deliciousness in everything we consume without a whole drawn out process.  I just love her site and how it aims to make eating beautifully accessible to all.  Elettra is a friend, too (we both recently transitioned from totally different careers to Blogging!) and I asked her to create an easy recipe to share with my readers on Happily Eva After.  The only instruction: something yummy and simple that could be turned in to several meals for busy Moms on the go!  I’m obsessed with this Sausage and Broccoli Sheet Pan recipe she came up with and I know you will be too!

A few words from Elettra on her recipe:

Feeling overstretched and slightly (OK, very) overwhelmed all the time is something that I think everyone can relate to. Yet, in all the madness of any given day, most people I know crave a home cooked meal over takeout or delivery. This one sheet pan meal is perfect for anyone who wants to cook for themselves or their family, but also feels tears well up in their eyes at the thought of another trip to the grocery store. The best part about this recipe is that it pays dividends: Roasting up some sausages and broccoli can be enjoyed on it’s own, with eggs in the morning, as a sandwich, or in a delicious, hearty pasta. Who knew just 5-ingredients (extra virgin olive oil, sausages, broccoli rabe, garlic, and salt) and 20 minutes could yield so much deliciousness?

 

We couldn’t agree more. This recipe is also super kid-friendly– and healthy to boot! I can’t wait to make my life easier this week just by using one sheet pan.  Thanks, Elettra!
